Vegan Almond Butter Cups

Making healthy candy at home has never been easier! These Vegan Almond Butter Cups offer the perfect balance of chocolate and creamy filling, while being refined sugar-free and gluten-free. Not only are they delicious, but they also provide functional nutrition benefits that support heart health, hormone balance, energy levels, and overall well-being.


Plus, they’re so simple to make, even kids can join in the fun!


Vegan Almond Butter Cups Recipe

Prep Time: 10 minutes

Chill Time: 10 minutes

Makes: 12 mini cups


Ingredients:

  • 1 cup vegan, refined sugar-free dark chocolate (e.g., Hu dark chocolate gems)

  • ½ cup raw, creamy, unsalted almond butter (or any nut/seed butter)

  • 2 tablespoons maple syrup

  • Optional: ¼ teaspoon salt (if almond butter is unsalted)

  • Optional: 1 teaspoon coconut oil (to thin out chocolate if needed)


Instructions:

1) Melt the chocolate

  • If your melted chocolate is too thick, add 1 teaspoon of coconut oil at a time until it becomes smooth and pourable.


2) Prepare molds

  • Place a silicone candy mold on a baking sheet (for stability). If using a mini muffin tin, line it with paper cup liners.

  • Pour a thin layer of melted chocolate into the molds, just enough to cover the bottom. Freeze for 5 minutes.


3) Make the almond butter filling

  • In a bowl, mix almond butter, maple syrup, and salt (if using) until smooth.

  • If the mixture is too runny, add 1 teaspoon of coconut flour at a time until it thickens enough to roll into small balls.


4) Assemble the cups

  • Roll small balls of almond butter mixture and place one in the center of each mold.

  • Lightly flatten the filling, leaving space around the edges for the chocolate to fully encase it.


5) Top with more chocolate

  • Pour the remaining melted chocolate over the filling, ensuring it completely covers the almond butter.


6) Chill and set

  • Place the tray in the freezer for 10 minutes until the chocolate is solid.


7) Enjoy!

  • Pop the candies out of their molds and enjoy at room temperature or chilled.

  • Storage: Keep leftovers in an airtight container in the fridge for up to 2 weeks.
